DThese brioches have everything going for them, from their shape and beautiful golden color to their cinnamon flavor. They'll be a lovely addition to your afternoon tea or breakfast table. .

Cinnamon gives these magnificent brioches an exceptional flavor; it's not the first time I've used it in pastries, and each time I'm completely won over! Before you even taste them, I'm sure you'll love the aroma that fills the house while they're still in the oven.

Contrary to what you might think from looking at the ingredients, these brioches are not too sweet, but you can adapt them to your taste by adjusting the amount of sugar you add. 

 

Ingredients for approximately 13 small rolls:
 

  •  500 grams of flour  
  •  1 teaspoon of dried yeast or 30g of fresh yeast
  •   60 g of sugar

     

  •   2 eggs
  •   250 ml of milk
  •   half a teaspoon of salt
  •   70g of softened butter

For the brioche filling:

  • 80g of butter at room temperature
  • 70 g of sugar
  • 2 teaspoons of cinnamon

 

Preparation :

 Mix milk, sugar and yeast. Add the eggs, flour, softened butter and salt.  

Knead to form a smooth dough. Cover and let rise in a warm place until doubled in volume. Approx. 1 hour 30 minutes.

 Pass After this time, divide the dough into approximately 13 pieces, about 73 grams each. Form into balls.

In a bowl, mix the butter, sugar and cinnamon to obtain a creamy consistency.

Flatten Roll out each ball of dough with a rolling pin, then brush with a spoonful of softened sweetened butter. Roll up the dough like a crepe. Take both ends and fold them underneath, then make incisions and twist the dough to the right and left to give it a butterfly shape.

Place Place the dough butterflies on a baking sheet lined with parchment paper and let rise for 30 minutes.

Heat preheat the oven to 200°C, brush the butterflies with an egg mixed with 1 tablespoon of milk.

Bake for 20 minutes. Let cool on a wire rack.
