Sweet pastry for a sweet tart

One of the basic recipes for making all kinds of sweet tarts for your desserts, it can be flavored to taste, prepared in advance and frozen for possible use.
I leave the dough in the fridge for 3 hours or overnight if possible, it is easier to roll out afterwards but if you don't have time you can leave it for 1 hour.
Our pies are always better when they are made with homemade pastry, you can immediately see the difference!
Serves 6 to 8. Preparation time: 20 minutes
- 250 g of flour,
- 125g of icing sugar,
- 125g of butter,
- 1 egg,
- Zest of half a lemon or pulp of half a vanilla pod
- 1 pinch of salt
Sift the flour, distribute the butter in pieces on top (the butter should be slightly soft).
Work the mixture with your fingertips to create a sandy texture.
Add the sugar, salt and the flavoring of your choice (lemon zest, vanilla, cinnamon, etc.)
Mix together, then incorporate the lightly beaten egg. Quickly work the dough until the egg is fully incorporated; you should have a smooth dough.
form a ball which you flatten a little, wrap the dough in cling film and leave it in the fridge for 3 hours.
