This cake is made from a brioche dough with yogurt, mixed with dried figs, and topped with sliced apples.

INGREDIENTS

50g of softened butter

20g of oil

50g of sugar

3g of salt

Grated zest of a lemon

2 eggs

1 plain yogurt

50ml of lukewarm water

10g of baker's yeast

250g of flour

100g of dried figs

3 apples

1 tablespoon of apricot jam

STEPS

1/ Soak the dried figs in hot water, let them swell, drain them and then cut them into small pieces.

2/ Beat together the butter, oil, sugar, salt and lemon zest.

3/ Add the eggs one by one and whisk until you obtain a homogeneous mixture.

4/ Gradually incorporate the yogurt and then the yeast dissolved in water while continuing to whisk until a homogeneous mixture is obtained.

5/ Add the flour and mix everything together well.

6/ Add the dried figs last, mix well and spread the batter in a 22cm diameter mold, previously buttered and floured, let it rest in a warm place for 30 to 40 minutes.

7/ Peel the apples, slice them and arrange them harmoniously on the cake.

8/ Bake the cake for 30 to 35 minutes in an oven preheated to 180°C.

9/ Allow to cool slightly then unmold the cake onto a wire rack, brush it with apricot jam.

Dried figs are a source of energy, characterized by their high potassium, calcium, and iron content. They are also a good source of vitamin B6 and fiber. Enjoy them on their own or incorporate them into your pastry dough, cakes, and cookies; you can also use them to garnish salads or in the preparation of tagines.
