MACARON RECIPES – Faty's Recipes
Macarons with French meringue topped with dark chocolate ganache.

Ingredients:
for the macaron shells:
– 80g of almond flour
– 80g of icing sugar
– 90g of powdered sugar
– 75g of egg whites at room temperature
For the ganache:
– 150g of dark chocolate
– 15 cl of liquid cream
– 30g of butter at room temperature
Preparing the ganache:
Bring the cream to a boil, then remove from the heat and add the chopped chocolate. Whisk until smooth and then stir in the butter. Whisk well or blend with an immersion blender, then refrigerate overnight.
Preparing the macaron shells:
Mix the almond flour with the icing sugar and vanilla sugar to obtain a fine powder, then sift the mixture.
Beat the egg whites, adding the sugar in three stages until you obtain a firm, smooth and glossy meringue.
Next, incorporate the almond flour and icing sugar mixture and mix without breaking the egg whites (macaronage). Your mixture is ready when it forms a ribbon.
Fill the piping bag and pipe macarons about 3 cm in diameter. Tap the underside of the baking sheet to smooth the surface of the shells. If any bubbles appear, pierce them with a toothpick.
Let them form a crust for 30 minutes. The surface of the shells should not stick to your finger.
Bake in a preheated oven at 160°C for 12 minutes. Let them cool before removing them from the baking sheet.
Remove the ganache from the fridge and whip with a mixer or immersion blender, then fill your macarons and let them rest overnight in an airtight container; they will be better the next day.
