Shrimp and avocado salad
This salad is made with shrimp, avocado, tomatoes, green bell pepper, and rice. It's dressed with lemon juice and served in hollowed-out avocado halves. Perfect for adding variety to your summer salads!
INGREDIENTS
300g of cooked and peeled shrimp
1 small glass of rice (100ml)
2 lawyers
2 tomatoes
1 small green pepper, grilled and cleaned
2 tablespoons of olive oil
4 tablespoons of lemon juice
½ tsp of salt
¼ tsp pepper
Black olives for decoration
STEPS
1/ Cook the rice in boiling salted water, drain it and let it cool.
2/ Cut the green pepper into small cubes.
3/ Peel, deseed the tomatoes and cut them into small dice.
4/ Cut the avocados in half lengthwise, remove the pits, gently scoop out the flesh with a tablespoon; dice it and rub it with lemon juice (reserve a few pieces for the final decoration).
5/ Mix all the salad ingredients together and refrigerate.
6/ Fill the avocado halves with salad and decorate with shrimp, avocado pieces and black olives.
Tip of the day:
It is advisable to use little fat in salads prepared with avocado, as this fruit is naturally fatty.
