Lemon cream, mascarpone and meringue verrine
Today I'm offering you this lemon mascarpone cream.A simple dessert to make, delicious, fresh and light. A real treat.
A lovely touch of freshness to start the summer season.
Ingredients :
For the lemon cream:
– The juice of 3 lemons
– The zest of a lemon
– 200 g of sugar
– 3 eggs
– 80g of butter
For the mascarpone cream:
– 250g of mascarpone
– 20 cl of liquid cream at 30 %
For the garnish:
– Biscuits of your choice or macarons (for me)
– A few meringues (optional)
Preparation:
In a saucepan, combine the lemon juice and zest, sugar, and eggs. Cook over medium heat, whisking constantly, until bubbles begin to form. Remove from the heat and whisk again. Let the mixture cool slightly, then whisk in the room-temperature butter until thick and smooth. Cover the surface of the cream with plastic wrap and refrigerate for at least one hour.
Place the cream, sugar and mascarpone in the mixing bowl and refrigerate for 2 hours.
Take out the chilled bowl and whip the cream.
Incorporate the lemon cream into the mascarpone cream using a spatula.
Distribute the macarons at the bottom of the verrines (you can crumble them), cover with a little cream then more macarons and finish with a layer of cream.
Refrigerate for at least 4 hours.
When ready to serve, place a meringue on each verrine.
